The olives must be harvested early and milled daily to preserve their antioxidants and high polyphenol content. The result is an olive oil with green fruit, freshly cut grass and tomato plant aromas.
Cornicabra Extra Virgin Olive Oil comes from a century-old olive grove operated by a young couple, Guillermo and Laura.
In 2013, they decided to restore the family olive grove located in Arcicóllar, Toledo, and produce their own oil. Some of the olive trees are more than 300 years old and were once cultivated by their great-grandfather.
Their primary focus is on organic farming. Beyond certification, they are committed to restoring the balance of the ecosystem and biodiversity.
The oil is produced from the olives of 1,400 centuries-old olive trees spread across different farms in Arcicóllar, Toledo.
Above all, Guillermo and Laura believe in the quality of the fruit. They take the utmost care throughout the entire process to preserve the aroma and flavour of the green-harvested olives.
